Pasta with Tomatoes

Cook up a portion of pasta and drain; add some canned tomatoes, a sprinkle of olive oil and fresh or dried basil or pesto. Top with a little finely grated Parmesan cheese.

Risotto Pasta

Combine cooked orzo pasta, heavy cream, grated Parmesan cheese and garlic powder in a saucepan. Simmer on medium-low heat until thick and creamy. Season with salt and pepper to taste and add chopped fresh basil or parsley just before serving.

Udon Noodles in Miso Broth

Combine broth, soy sauce and miso paste in a saucepan and bring to a simmer over medium heat. Add cooked udon noodles and simmer to heat through, about 2 to 3 minutes. Optional: Add firm tofu chunks and chopped scallions.

Chili cheese pasta

Combine milk, shredded Cheddar cheese, salsa, chili powder and ground cumin in a large saucepan. Simmer on medium heat until cheese melts. Gently fold in cooked, drained tube-shaped pasta (such as rigatoni) and, if desired, drained canned kidney beans. Heat about 2 minutes.

Thai noodles

Whisk together peanut butter, soy sauce, lime juice (optional), sesame oil and a little hot sauce. Gently fold in cooked spaghetti or cooked somen or udon noodles. Optional: Sprinkle with chopped fresh cilantro before serving.
