If you are like me you’ve been to a lot of Christmas parties already. Your body is telling you it still wants to eat, but something more plain than party foods, simpler, healthier and low calorie. The next night you get to stay home make this dish. It fits the bill!

Greek Lentils

2 cups dry lentils
2 cups shredded carrots
1 cup chopped onion
3 14-oz. cans vegetable broth
2 tsp. Greek seasoning (see below)

Rinse lentils. Drain well. Lightly coat slow cooker with oil or spray. In the prepared cooker; combine lentils, carrots, onion, vegetable broth and Greek seasoning.
Cover and cook on low-heat for 6-7 hours or on high-heat for 3 to 3 1/2 hours.

Greek seasoning
3/4 teaspoon Greek oregano
1/2 teaspoon cumin, ground
1/4 teaspoon paprika
1/4 teaspoon pepper
1 teaspoon dried garlic, minced
1 pinch salt

Mix all ingredients.
