Most nights just about everyone wants to get dinner on the table fast. Here are 6 speedy recipes that are also easy and good!

Cheesy Rigatoni Bake

Mix one egg in 15 oz. of ricotta
Bake one pound of rigatoni to al dente; mix in casserole dish with the ricotta
1 qt. of spaghetti sauce
2 cups shredded mozzarella
Bake at 350 for about 45 minutes

Shrimp Alfredo

Vermicilli, cooked according to directions
One bag of small, peeled shrimp, heated in some butter in skillet
One jar of Alfredo sauce
Mix all in the large skillet and cook till thickened

Garlic Mushroom Pasta

Choose your favorite pasta and cook according to package directions.
Heat butter or olive oil and add:
Chopped garlic
Sliced mushrooms
The pasta
Season it well, with salt and crusted black pepper, add freshly grated cheese (parmesan and or cheddar) and serve it right away.

Pasta with Pesto
Heat olive oil in a pan and add any cooked pasta
Add one tablespoon of pesto
Reduce the heat and add parmesan

Creamy Pesto Shrimp

1 pound linguine pasta
1/2 cup butter
2 cups heavy cream
1/2 teaspoon ground black pepper
1 cup grated Parmesan cheese
1/3 cup pesto
1 pound large shrimp, peeled and deveined

Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, or until al dente; drain.

In a large skillet, melt the butter over medium heat. Stir in cream, and season with pepper. Cook 6 to 8 minutes, stirring constantly.

Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed. Blend in the pesto, and cook for 3 to 5 minutes, until thickened.

Stir in the shrimp, and cook until they turn pink, about 5 minutes. Serve over the hot linguine.

Creamy Pesto with Chicken

2 pieces chicken breast
Cubed onions and garlic
1 c. all purpose cream butter
basil or pesto
1/4 c. stewed tomatoes

Sauté garlic and onions in olive oil for one minute. Add chicken breast and sauté until cooked. Add tomatoes and all purpose cream. Simmer for about 8-10 minutes. Make sure not to boil cream. Add pesto at the last minute. Serve with fettuccini noodles
