It’s August and I have garden fresh tomatoes on my kitchen counter. Since you can only eat so many tomato sandwiches (actually I could eat a lot of them. I am seriously addicted, but I pace myself!) I made this yummy dish for dinner tonight. The basil is from my garden too!

2 Tbl. olive oil
2 cups uncooked rice
1/4 tsp. white pepper
5 1/2 cups chicken bouillon

Stir rice in olive oil until golden.

Add the pepper and chicken bouillon.

Heat to boiling, stirring occasionally.

Reduce heat and simmer.

3 tomatoes, chopped
1 lb. mozzarella cheese, shredded
1/2 cup chopped, fresh basil.

Mix tomatoes, cheese and basil into rice. Stir until cheese melts and all bouillon is absorbed.

In the picture the rice is about a couple minutes from being done.
