Black Bean Pinwheels
1 can black beans-rinsed, drained, and mashed
1-8oz sour cream
1-4oz cream cheese, softened
1/4 cup Monterey Jack Cheese, shredded
1/4 tsp. Onion Salt
Flour tortillas
Salsa for dip
Mix well: beans, sour cream, cream cheese, shredded cheese, onion salt with mixer. Spread onto tortilla and roll up. Refrigerate for a few minutes, then cut into small round pinwheels. Dip in Salsa to eat.
Sausage Wonton Appetizers
1 lb sausage, cooked and drained
16-oz sour cream
I pkg buttermilk dressing (I used Ranch)
4 cups shredded cheese (2 cups Monterey Jack, 2 cups cheddar)
1 pkg wonton wrappers
Mix all ingredients together. Put wonton wrappers into mini muffin pans. Scoop in the mix and slightly tuck the ends together. Bake at 400 degrees for 10-12 minutes or until slightly golden brown. Makes about 80 wontons.
Meatballs
1 bag frozen meatballs
2 bottles of Heinz chili sauce
2 cans of whole cranberries
Mix together sauces in a 6 quart Crockpot, set on low/med, (depending on how fast you want them ready…usually warms up quickly), add meatballs and toss until covered. Cover pot and warm on low for 2-3 hours or medium 1-2 hours.
Serve with toothpicks.
Mexican Chili Dip
2 lbs ground beef, browned
1 large jar of Pace Picante Sauce
1 small onion chopped fine
1 green pepper
1 pkg cream cheese
2 cups cheddar cheese
1 small can tomato paste
1 packet of taco seasoning
1 to 1 1/2 cups of water
Combine all ingredients in Crockpot and let simmer for about an hour or so. Add cheddar cheese just before serving. Serve with Tortilla chips
