John and I worked in the yard this afternoon, came in and showered and made this great comfort food dish: Skillet nachos

Make refried beans first;

1 Tbl. olive oil
1/2 onion, chopped
1 Tbl. chopped garlic
2 Tbl. jalapenos, chopped
2 Tbl. lime juice
1 large can pinto beans, drained

Saute onions and garlic in oil, add remaining ingredients and heat through. Mash well.

For nachos;

Line a skillet with nacho chips.
Add 1 cup salsa to the bean mixture and layer on top chips.
Sprinkle with grated cheese.
Cover and heat through.

I put cheese on just my husband’s half.
