Cucumber salad

1/2 cup mayo
1/2 cup sour cream
1/4 cup sugar
4 tsp white vinegar
1/2 tsp dill weed
1/2 tsp salt
3-3 Tbsp chopped onion
3-4 medium cucumbers, peeled & sliced thinly
Mix & chill for at least an hour.

Cucumber Spread

1 8 oz pkg cream cheese
1 stick butter
1 medium cucumber, peeled, seeded & grated
1/2 t garlic powder

Combine all ingredients. Place in a small glass bowl and serve with crackers or assorted vegetables.

Cucumber Sandwiches

8 oz. cream cheese
1/2 c. Miracle Whip
1 pkg. Good Seasons Italian dressing
Cocktail rye bread
Sliced cucumbers

Blend cream cheese, Miracle Whip and seasoning package all together. Spread onto slices of cocktail rye bread. Put slice of cucumber on top. May sprinkle with paprika. Keep refrigerated.

Cucumber Cream Cheese Sandwich Spread

2 (3 oz.) pkgs. cream cheese, softened
2 medium cucumbers, peeled, grated
1 small onion, grated
2 tbsp. mayonnaise
Salt and pepper to taste

Add cucumbers and onion to cream cheese with just enough juice to make good spreading consistency. Stir in mayonnaise, add salt and pepper.

Refrigerator Pickles

5 to 6 cucumbers sliced
1 small onion sliced
1/2 cup sugar
1/2 cup white or cider vinegar
1 tsp mustard seed
1/4 tsp celery seed
1/4 tsp turmeric

Wash and slice cucumbers and onions
Place all ingredients in a 2 qt pyrex bowl and cover
Microwave on high for 7 minutes
Stir
Microwave another 7 minutes on high
Let cool completely
Place pickles in tightly covered jars
Refrigerate
Pickles will keep in refrigerator for about 3 to 4 months.
