Our Gourmet Club did a Tapas dinner the other night that was out of this world! I’ve talked about this group before, so if you are interested in starting your own Gourmet Club just type that into the search bar and see those posts.

We had nine people at this dinner, but it looks like we were feeding twice that many!

I’m going to start with two of the easiest recipes here and give you a few more in the next post. Enjoy!

Stuffed Mushrooms:

Baby portabella mushrooms, de-stemmed

Mix together:
Frozen spinach, defrosted and drained
8 oz. cream cheese, softened
2 Tbl melted butter
1 cup Parmesan Cheese

Spoon mixture into the mushroom caps and bake at 350 for 15 minutes.

Polenta Cake Tapas:

Use your favorite prepared polenta cake and cut into 1/4” rounds
Coat each circle with olive oil; top with diced olives or olive tapenade, then add some chopped roasted red pepper.
Heat in oven at 350 for about 15 minutes.
Broil for a few minutes to brown the top.
