Here are three more recipes from our recent Tapas Gourmet Club:

Spinach and Stuffing Balls

• 1 pkg. (6 oz.) STOVE TOP savory herb Stuffing Mix
• 1-2/3 cups hot water
• 1/4 cup butter or margarine, cut up
• 2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained and patted dry
• 1 cup KRAFT Grated Parmesan Cheese
• 1 cup chopped fresh mushrooms
• 1 small onion, finely chopped
• 2 eggs

Heat oven to 400ºF.
Mix stuffing mix, hot water and butter in large bowl until blended.
Add remaining ingredients; mix lightly. Shape into 60 (1-inch) balls. Place in single layer on 2 rimmed baking sheets sprayed with cooking spray.
Bake 15 to 20 min. or until heated through and lightly browned.

Mini Spanakopita

• ½ Tbsp olive oil
• 1 small sweet onion, minced
• 4 garlic cloves, minced
• 10 oz frozen chopped spinach, thawed and wringed out of all water
• 6 oz feta cheese, crumbled
• 1 oz cream cheese
• 1 egg
• ½ tsp salt
• ½ tsp pepper
• ⅛ tsp nutmeg
• 2 pkgs frozen mini phyllo tarts (total of 30 tarts)

Preheat oven to 350 degrees F.
In a sauté pan, heat olive oil. Add minced onions and sauté until softened, about 5 minutes. Add garlic and sauté for 30 seconds.
Add spinach (drained very well) to onion mixture and stir well to break up any large pieces of spinach.
Add mixture to a mixing bowl. Add feta, cream cheese, egg, salt, pepper and nutmeg. Stir well until mixture is well combined.
On a baking sheet, add mini phyllo cups. Add a heaping tablespoon mixture into each tart.
Place in oven and bake for 10 -15 minutes, until mixture is heated through.
Serve immediately.
Notes: *Spinach filling can be made ahead of time, then assembled and baked right before serving!

Homemade Payday Candy Bar

• 10 oz Reese’s Peanut Butter Chips
• 14 oz Sweetened Condensed Milk
• 3 tbsp Butter
• 2 cup Mini Marshmallows
• 24 oz. Dry Roasted Peanuts

Prepare a 9×13 pan by buttering bottom and sides.
Pour half of peanuts into the pan.
Microwave chips and butter in a bowl, 30 seconds at a time until melted.
Add in condensed milk and marshmallows, microwaving, 30 seconds at a time, stirring until everything is melted and blended together.
Pour mixture over peanuts in the pan, distributing evenly.
Top with remaining peanuts and press down to help adhere top layer of peanuts.
Chill before cutting into squares.
