Slow Cooker Pot Roast

1/4 cup water
4 medium red potatoes, cut in quarters
1 medium onion, cut in quarters
1 package (16oz) peeled baby carrots
1 envelop (1 oz) onion soup mix divided
1/4 teaspoon each salt, pepper and dried thyme leaves
2 1/2 to 3 pound boneless beef chuck pot roast

Place water and three-fourths of the vegetables in the slow cooker. Reserve 1 tablespoon onion soup mix. Sprinkle remaining onion soup mix over vegetables. Stir to coat evenly, Sprinkle and rub salt, pepper and thyme over pot roast. Place roast over vegetables. Place remaining vegetables over pot roast and sprinkle with remaining onion soup mix. Cook on low 8 to 9 hours or high 5 to 6 hours, until roast it tender.

Chunky Beef Vegetable Soup

3 cups vegetable juice
2 cups hot water
1 pound beef for stew cut in 1 inch cubes
8 cups frozen mixed vegetables
2 medium potatoes, peeled and cubed
1 small onion, chopped
1/4 cup ketchup
3 tablespoons beef-flavor instant bouillon
1/2 teaspoon pepper

Pour the vegetable juice and water in cooker. Add beef, vegetables, ketchup, bouillon and pepper; stir gently. Cook on low or 9 to 8 hours or high for 4 to 5 hours until beef is tender.

Swiss Steak

1-1/2 lbs. Round Steak (about 4 steaks)
2-4 Tbl Flour
1 8oz can Tomato Sauce
1 Pkg. Onion Soup Mix
Water

Coat Round Steaks in flour place. Place in bottom of crockpot. Mix together Tomato Sauce, soup mix and water; pour over steaks. Set crockpot to low for 8-10 hours.
