I had a party last week and one of the things I served was a large basket of baby carrots, mushrooms and broccoli with a ranch dip. We had A LOT of vegetables left over. The day after we went out on the boat, so our picnic included veggies and dip. The night after that I made a huge salad.

I hadn’t made a dent in the leftovers!

The next night I threw together a stir-fry with rice dish. I put a little olive oil in a large skillet and added 2 cups of uncooked rice. I stirred it around until the rice started to brown, threw in a handful of chopped onions, 2 tablespoons of chicken bouillon and 2 teaspoons of garlic salt. Then I added 4 cups of water and let it boil while I cut up broccoli and mushrooms. I added those and turned the heat down to low when the water was nearly absorbed.

It was excellent!

The following night I heated some large flour tortilla shells and cut up carrots, mushrooms and broccoli, which I put on each shell. Then I poured a little salsa over each and microwaved it for 45 seconds.

Another hit!
