Since I’m a vegetarian and also don’t eat desserts John filled my Easter basket with grapes, avocados, strawberries and nuts! He knew I was making a ham (for him) and my famous (in my own mind) potato salad for Easter dinner and had looked up a spring recipe for a salad to make. It took him 1 hour and 3 you tube videos about how to pit and peel an avocado and more dishes then seemed possible, but the results were quite good!

Strawberry Avocado Salad

Whisk together in a small bowl:Strawberry Avocado Salad

1 Tbl. sugar
2 Tbl. olive oil
4 tsp. honey
1 Tbl. cider vinegar
1 tsp. lemon juice.

Drizzle over: 2 cups of salad greens, 1 avocado (peeled, pitted and sliced),
10 strawberries, sliced. Spinkle with 1/2 cup chopped pecans or almonds.
