Here are four snacks you can make to use up that bushel of cucumbers you’ve got!

1. Place sliced cucumbers and slice mozzarella on Rosemary Triskets.

2. Fill a whole wheat pita with hummas spread, turkey slices, swiss cheese and sliced cucumbers.

3. Spread cream cheese on a tortilla and cut it like a pizza. Then place a slice of cucumber on each piece and sprinkle with dry Italian seasoning. Roll each up.

4. Peel and slice cucumbers, add tomatoes and enough italian dressing to cover. Let them sit in the fridge for at least an hour.
