I saw this recipe and thought, “Well, that might be a good way to use an avocado.” But was more then pleasantly surprised by how tasty it is! REALLY tasty!! We ate this warm, but the recipe actually calls for it to be chilled and served as a salad.

Cook 2 cups raw rice in 4 cups water. (I did 1 cup white rice and 1 cup brown rice)

Stir in 1 avocado, cut into small pieces
1 medium tomato, cut into pieces
1/4 cup diced onions
2 fresh basil leaves, crushed

Mix dressing together while rice is cooking:
1/3 cup extra virgin olive oil
1/4 teaspoon cayenne pepper
1 garlic clove, minced
juice of two lemons
sea salt and ground black pepper to taste

Stir well into rice mixture.
