Our Gourmet Club kicked off spring with a wonderful Greek dinner last night. The food was yummy and spirits were high! I’m including the appetizer recipe that I made below. We also had a beautiful Greek salad, chicken, fish, stuffed vegetables, pita bread and a nutty chocolate Greek cake. (Plus lots of wine and olives!)

GREEK SPINACH ROLL-UP

1 package (9 oz.) frozen chopped spinach, thawed, squeezed dry with paper towels
1/2 cup crumbled feta cheese
1/2 cup shredded mozzarella cheese
1 egg (I used 1/4 cup Egg Beaters)
1 teaspoon dried oregano
1 package (10.6 oz.) refrigerated pizza crust
1 tablespoon Italian or Greek salad dressing

Preheat oven to 350 degrees F. Spray cookie sheet with Pam and set aside.
Combine spinach, feta cheese, mozzarella cheese, egg and oregano in a medium bowl; blend well; set aside.
Unroll pizza crust dough onto cookie sheet.

Brush dough with dressing. Spread spinach mixture evenly over entire surface of dough. Starting with longest side, roll up dough; pinch edge of dough to seal seam.

Bake 20 to 22 minutes or until golden brown. Serve warm.
