My cousin, Penny, made this quiche for the family the Saturday after Thanksgiving. It was tasty and beautiful and a good recipe to keep on hand for brunches or light suppers.

Broccoli, steamed in microwave- 2-3 mins., enough to cover bottom of pie crust
2/3 cup leeks or chopped onion
4 eggs
1 1/4 cup milk
1 teaspoon salt
ground pepper, to taste
few drops hot pepper (Tabasco) sauce
1Tablespoon fresh parsley, chopped
1/8 teaspoon nutmeg
2/3 cup shredded Swiss cheese
1/3 cup shredded Parmesan cheese

Place broccoli, onions, cheese, parsley in the unbaked crust. Then combine the eggs, milk, salt, etc. in the blender and pour the egg mixture over the cheese.

Sprinkle the top with paprika.

Bake at 400 degrees for about 30 to 35 minutes.
