Our gourmet club did a low country boil at our last dinner on Memorial Day. The hostess put out all the parts of the boil separately so we could mix and match: chicken, sausage, shrimp, potatoes, onions and corn on the cob. With appetizers and roasted vegetables we had a healthy and colorful meal.
Then came the dessert! I made it and I have to admit it wasn’t healthy. But I think every once in awhile you’ve got to just let loose!
1 can crushed pineapple with juice (15 oz)
1 package cream cheese (8 oz)
1 and a half packages of powdered sugar
Beat together and set aside.
Make a yellow cake according to package direction. Bake in a 13×9″ pan. When done, cool and cut into small cubes.
Layer cake cubes and sauce in a large glass bowl. Top with an 8 oz. container of whipped cream.
