Before heading out to Food Lion to pick up some groceries, I got on their website to see if they had any coupons. This was my first visit and I was really impressed with their recipe section.

So if you can’t find something that hits the spot for tonight’s dinner (after looking here or at my website http://www.abridescookbook.com first of course!) you should check them out.

Here are 2 examples of their recipes I plan on trying:

Tex-Mex Black Bean Dip

1 can (15 oz.) black beans, rinsed and drained
1/2 cup thick and chunky salsa
1/2 tsp cumin
1 cup shredded Monterey Jack cheese with peppers
1/4 cup chopped fresh cilantro
2 Tbs lime juice
Shredded Monterey Jack cheese with peppers (optional)
Crackers Town House® Bistro™ Corn Bread Crackers

In small saucepan combine beans, salsa and cumin. Cook and stir over medium heat until heated through.
Reduce heat to low. Stir in 1 cup cheese until melted. Add cilantro and lime juice. Stir until combined. Transfer to serving bowl. Garnish with additional cheese, if desired. Serve warm with crackers.

Guacamole Dip
1 1/2 Fresh garlic cloves
1/8 tsp Salt
1/8 tsp Black pepper, ground
3 Fresh avocado
6 3/4 tsp Fresh lime juice
2 1/4 Fresh small red tomatoes 2 1/2″
3 oz Canned green Chile peppers
1 1/2 Fresh whole small white onion

Peel avocados and remove the pits; set aside.
Peel and mince the onion and garlic; set aside.
Finely chop one tomato; chop the remaining 1/2 tomato and put aside to use as top decoration once the guacamole is prepared.
Finely chop the green chilies; set aside.
Mash the avocado in a medium-size bowl and then stir in onion, garlic, chopped tomato, green chilies, lime juice, salt and pepper; cover and refrigerate.
Garnish with reserved chopped tomatoes before serving.
Serve cold with tortilla chips.
