Easy Crockpot Enchiladas

2 – 4 frozen Chicken breasts
1 can tomatoes and chilies
1 package taco seasoning

Mix taco mix and tomatoes together and pour over chicken. Cook in a crock pot on low all day and shred chicken with 2 forks before you serve.

Take flour tortillas and shredded cheese.
Optional – instead of tortillas you may serve this over rice.

Chili Frito Casserole

1.5 (medium size can) red chili enchilada sauce
2 cans of pinto beans
1.5 pounds ground beef
Shredded Cheddar Cheese
Chili Cheese Frito Corn Chips
onions, optional
mild chilies, optional
sour cream, optional

Cook ground beef with onions and drain. Mix together with pinto beans, enchilada sauce, and green chilies. Top with crushed corn chips and cheddar cheese. Bake until cheese melts. Serve over white or brown rice. Top with a dollop of sour cream.

Mexican Steak

skirt steak, size varying on your family (cut into medium sized strips)
2 large onions roughly cut
2-3 large green bell peppers sliced
2-3 red bell peppers sliced
1 carton of beef broth
1 package taco seasoning
black pepper, salt to taste

Put all into crock pot, set it on low, and let it simmer for 8-9 hours. Serve over rice, or add cheese and sour cream and serve as burritos
