When we were in Costa Rica at least one lunch or dinner a day had an enormous salad bar. I really got hooked on building a big salad with dozens of ingredients.

When we got home I decided I can never go back to my lettuce, tomato, carrot salads and have started creating a salad bar at dinner. They are so good even my husband doesn’t need dressing!

I bought lettuce, spinach, broccoli, carrots (to shred), sunflower seeds, raisins, mushrooms, apples, oranges and garbanzo beans. Then I mix the lettuce and spinach in a bowl with the shredded carrots and put everything else out on the table so we can each build our own salad.

I only spent about $8.00 and can get at least 4 nights of salads for 2 out of it!
